With soils acutely depleted of minerals, in turn producing nutrient-deficient crops, it is up to us to grow / demand nutrient dense food. A quick and easy way of growing nutrient dense crops is by remineralizing the soil with rock dust. Imagine eating one apple produced on remineralized soil = present day nutrient deficient FIVE apples.
